  • A species of dock, Rumex hymenosepalus (family Polygonaceae), native to the south-western United States and northern Mexico, having clusters of pink flowers, long taproots high in tannin, and edible thick reddish stems and large fleshy leaves.


Mid 19th century. Apparently from Mexican Spanish canaigre, cañagre, cañaigre (both 1902 or earlier), variants of cañagria from caña agria, lit. ‘sour reed’ from caña + agria, feminine of agrio sour.
